
Review of The Salt Room in Brighton
The Salt Room has been revered as one of Brighton’s best restaurants for many years, but its refurbishment of the Terrace has taken the location to a new level. Overlooking the famous West Pier, and i360, the new all year round South facing terrace has tongues wagging. It opens up in the summer, or with the recent heatwave, it stays shut with some very welcome air con.
The interior is spectacular, it feels welcoming yet elevated, with pink marble tables and solid wood chairs, the array of plants lends to a very Brighton feel. We had the best seats in the house, facing out with uninterrupted views of the beach and iconic pier, and if you’re lucky enough to book for sunset, you get to see the famous red skies of Brighton.
We chose to drink the house white wine, a Grenache Gris from France, which is not a varietal I’d tried before but it didn’t disappoint and priced at £32 it felt reasonable. The wine menu was extensive, with a notable selection of premium wines by the glass.

We started the meal with Freshly Shucked British Oysters. It would have been rude not to, given our location by the sea. The Bloody Caesar topping was incredible, with pickles and some other secret ingredient, we’d recommend that every day. The fact they were pre shucked also made the experience feel a lot easier. No fighting with these Oysters required!

For starters, we tried the waiter's recommendation of the Tuna Tartare, a classic, served on ice with a soy and orange ponzu and nori rice cracker. But the stand out starter by far was the Iberico Pork Ribs, that literally fell off the bone. There was very little fat, and they had somehow made them soft but crispy to the outside. The Apple and Fennel salad was the perfect partner for them.
For mains we had a lamb special, and their famous Grilled Seabass, which was butterflied, de- boned and cooked on the grill with a Bergamot and mandarin butter. It was a large portion, the fish was moist and delicious and we paired it with a side of Josper Roasted Runner Beans, that were so much more than just runner beans, and a great surprise. The dill yoghurt and chilli crunch were a welcome surprise.
We followed the outstanding mains with a Basque Cheesecake and English Custard Tart, which came with a raspberry sorbet. We really appreciated the crust of the custard tart, and biscuit to accompany it.
This trip to Salt Room really reignited our passion for the restaurant, it's been a few years since we dined there, and the new terrace was truly a game changer. The gorgeous food and lovely wine paired with the friendly service and outstanding views really made our night. We will 100 percent be back to sample more of the food and wine menus.
